About:

Camila Chilito is a third-generation coffee grower, daughter of Gilberto and Martha whose coffees Osito also purchase. While this is Camila’s first micro lot delivered under her name, her father has been growing coffee since he was fifteen years old.

The family lives on their farm, Finca Villa Caney, where they cultivate the Caturra, Colombia, and Gesha varieties alongside plantains and avocados. During the height of the harvest between September and November, the family employ six local pickers to help hand- select the cherry. Camila carries out the beneficio work (post collection processing), initially fermenting cherries for 72 hours in sealed bags before pulping and a second 72 hour fermentation in fresh sealed bags. Finally, it is washed twice and dried on the covered patio for a minimum of fifteen days. Camila then delivers this optimally dried parchment to Osito’s San Agustín bodega.
